These are a happy, happy moment in my day. Coconutty deliciousness wrapped up in a chocolate chip cookie. Do try.
You need:
1 c. butter, softened
1/2 c. sugar
1/2 c. packed brown sugar
1 egg
1 t. vanilla extract
2 c. flour
1 t. baking soda
1/2 t. salt
1 1/2 c. uncooked oats
1 c. flaked coconut
2 c. chocolate chips
Preheat oven to 350. Cream together butter and sugars. Add the egg and vanilla and mix until fluffy. Add in the flour, soda, and salt. Mix well. Add in the oats, coconut, and chocolate chips. The dough will be stiff.
Scoop rounded balls onto a cookie sheet sprayed with cooking spray. Recipes always say "rounded tablespoons-ful" or whatever, but who measures that?
Bake at 350 for about 10-12 minutes. I like my cookies to look slightly dough-y in the middles when they come out of the oven. They still cook a bit as they cool, and I don't like my cookies over cooked.
Remove to a cooling rack to cool. Then enjoy!
